Jalepeno appetizer recipe

I recently stumbled across a really neat food blog called The Pioneer Woman Cooks. The woman who writes it is funny and articulate. She photographs each step of the recipe, and her photos are very good. There are some really mouth-watering recipes on there. Her blog seems to have a lot of comfort food recipes--some classics and some new ones. I have tried two of the recipes so far, and have enjoyed them. I plan to try more. Last night for small group, the meal was pot luck. Perfect for Bacon-Wrapped Jalapeno Thingies! I also made my aunt Francis's sausage casserole for some more traditional fare that wouldn't burn the children's taste buds! :-)
Jon and I are both fans of food that is spicy, but retains good flavor and texture. This recipe was great for that.
A few things we discovered: the recipe calls for 1/3 slice of bacon wrapped around each half pepper. We found that too be too short. Jon likes having bacon in every bite, so last night at his suggestion, we wrapped them with a full slice, and that worked well. I think a half slice would work, as well. Also, we found that scraping all the white and all of the seeds out of the peppers took away all of the spiciness. I recommend leaving a little of each. I also recommend not over stuffing the peppers with the cream cheese--level with the pepper's edges would be perfect.

I recently discovered that site too. I'm a bit intimidated by some of her recipes, but I'll have to look at that jalapeno one. The one that caught my eye that I think I'll try is the chicken spaghetti, which sounds delicious.

Regina--Actually, the other recipe I tried was the chicken spaghetti! It was very good. I served it at small group, and people liked it. Jon enjoyed it at small group but thought it didn't heat up well for leftovers; I thought it was good both ways.
I used boneless skinless chicken breasts instead of the bone-in chicken. Boiling the spaghetti in the water that the chicken was cooked in actually made a pretty significant difference in the flavor of the dish--we enjoyed it.
Makes too much for a family of 4 unless you freeze some of the leftovers. It was perfect for small group.
