I adapted this recipe from my Better Homes and Gardens cook book. When I make this I usually double the recipe, because Jon and I love it! Plus, I try to use as much of the bunch of cilantro as I can before it goes bad. The measurements I use are not very precise--I use them as a guideline.
Combine the following in a food processor and pulse until desired consistency is reached:
2-3 cans of Rotel (diced tomatoes with green chilis), including liquid
1/4-1/2 cup sliced green onion (I used leeks when I made this last week)
Big handful of cilantro, with large stems removed (maybe 1/2 cup?)
2 Cloves garlic
2 Tbsp lemon juice
Dash black pepper
Dash salt, if desired
One word of caution: if you decide to double the recipe, do it in batches because it will not fit in your food processor.
